Ingredients for 2 servings
- 2 mahi mahi fillets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
To make the garlicky lemon mahi mahi, heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the mahi mahi fillets to the skillet and cook them for about 3-4 minutes on each side, or until they are browned and cooked through.
Add the minced garlic, parsley, lemon juice, salt, and black pepper to the skillet and stir to combine. Cook the mahi mahi for an additional 1-2 minutes, or until the garlic is fragrant and the fish is well coated with the lemon mixture.
Serve the garlicky lemon mahi mahi hot, garnished with fresh parsley and a squeeze of lemon juice, if desired. Enjoy!
