Cheesesteak Stuffed Peppers

Ingredients for 2 servings

  • 2 bell peppers, any color
  • 1/2 pound of thinly sliced steak
  • 1/2 cup of sliced onions
  • 1/2 cup of sliced mushrooms
  • 1/2 cup of shredded cheese, such as mozzarella or provolone
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

To prepare the peppers, preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Cut the peppers in half lengthwise and use a spoon to scoop out the seeds and membranes.

Heat the olive oil in a skillet over medium-high heat. Add the sliced steak, onions, and mushrooms, and cook until the steak is browned and the vegetables are tender. Season with salt and pepper to taste.

Divide the steak mixture evenly among the pepper halves and top with shredded cheese. Place the peppers on the prepared baking sheet and bake for 15-20 minutes, or until the peppers are tender and the cheese is melted and bubbly. Serve hot and enjoy!
