Ingredients for 2 servings
- 4 hard-boiled eggs, peeled and chopped
- 1/2 avocado, peeled, pitted, and diced
- 1/4 cup of diced cooked bacon
- 1/4 cup of diced cooked chicken
- 1/4 cup of cherry tomatoes, halved
- 1/4 cup of crumbled blue cheese
- 2 tablespoons of chopped fresh chives
- Salt and pepper to taste
In a medium bowl, mix together the chopped eggs, diced avocado, diced bacon, diced chicken, cherry tomatoes, and crumbled blue cheese. Stir in the chopped chives and season with salt and pepper to taste.
Serve the egg salad on top of your favorite bread or lettuce leaves, or enjoy it on its own as a salad. Enjoy!
