Ingredients for 2 servings
- 4 medium zucchinis
- 1 tablespoon of olive oil
- 1/2 pound of peeled and deveined shrimp
- 3 cloves of garlic, minced
- 1/4 cup of chicken broth
- 2 tablespoons of chopped fresh parsley
- Salt and pepper to taste
To prepare the zucchini noodles, use a spiralizer or a vegetable peeler to create thin strands of zucchini. Set them aside.
Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes, or until they are pink and cooked through. Remove the shrimp from the skillet and set them aside.
Add the minced garlic to the skillet and cook for 30 seconds, or until it is fragrant. Add the zucchini noodles and chicken broth to the skillet and cook for 3-4 minutes, or until the zucchini is tender.
Return the shrimp to the skillet and stir in the chopped parsley. Season with salt and pepper to taste and serve immediately. Enjoy!
