Greek Chicken

Ingredients for 2 servings

  • 2 chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/4 cup of kalamata olives, pitted and chopped
  • 1/4 cup of cherry tomatoes, halved
  • 1/4 cup of crumbled feta cheese
  • 1 tablespoon of chopped fresh oregano
  • 1 tablespoon of red wine vinegar

To prepare the chicken, season the breasts on both sides with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until they are cooked through.

Remove the chicken from the skillet and set it aside. Add the kalamata olives, cherry tomatoes, crumbled feta cheese, chopped oregano, and red wine vinegar to the skillet and stir to combine.

Slice the chicken breasts and serve them topped with the olive and feta mixture. Enjoy!
