Bacon Avocado Bombs

Ingredients for 2 servings

  • 2 avocados
  • 4 slices bacon
  • 1/4 cup diced red onion
  • 1/4 cup diced cherry tomatoes
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • Salt and pepper, to taste
  • Optional: hot sauce or additional salsa for topping

To prepare the dish, start by slicing the avocados in half and scooping out the pits. Then, in a medium-sized bowl, combine the diced onion, tomatoes, feta cheese, cilantro, and lime juice. Mix well.

Next, wrap each avocado half with a slice of bacon, securing it in place with a toothpick. Spoon the mixture from the bowl over the avocado halves, dividing it evenly between the two servings. Sprinkle with salt and pepper to taste, and then top with any optional toppings you desire, such as hot sauce or additional salsa.
