Ingredients for 2 servings
- 1 small butternut squash, peeled and cubed
- 4 slices of bacon
- 1/4 cup of shredded cheese, such as mozzarella or cheddar
- 2 tablespoons of chopped fresh parsley
- Salt and pepper to taste
To prepare the butternut squash, preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Cook the bacon in a skillet over medium heat until it is crispy, then set it aside to cool.
Place the cubed butternut squash on the prepared baking sheet and season with salt and pepper. Crumble the cooked bacon over the squash and top with shredded cheese.
Bake the squash for 25-30 minutes, or until it is tender and the cheese is melted and bubbly. Sprinkle with chopped parsley and serve immediately. Enjoy!
