- 1/2 pound ground beef
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 tablespoon taco seasoning
- 1/2 cup grated cheddar cheese
- 1/2 cup salsa
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro
To make the keto taco casserole, preheat the oven to 350 degrees F (175 degrees C).
Heat a large skillet over medium-high heat and add the ground beef, onion, and garlic. Cook the beef until it is browned and the onion is softened. Stir in the taco seasoning.
Spread the ground beef mixture in the bottom of a small baking dish. Sprinkle the cheddar cheese over the beef mixture.
In a small bowl, mix together the salsa and sour cream. Pour the salsa mixture over the cheddar cheese.
Bake the keto taco casserole in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Garnish the casserole with chopped fresh cilantro before serving. Enjoy!
