Ingredients for 2 servings
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and pepper, to taste
To prepare the dish, start by heating the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the garlic and cook for 30 seconds, or until it is fragrant.
Next, add the shrimp to the skillet and cook for 2-3 minutes on each side, or until they are pink and opaque.
Once the shrimp are cooked, add the chicken broth, lemon juice, and parsley to the skillet. Stir to combine, and then season with salt and pepper to taste.
