Ingredients for 2 servings
- 2 medium zucchinis
- 4 slices of bacon
- 1/2 cup of cooked quinoa or rice
- 1/4 cup of diced tomatoes
- 1/4 cup of diced onion
- 1/4 cup of shredded cheese
- 2 tablespoons of chopped parsley
- Salt and pepper to taste
To prepare the zucchini, preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper. Cut the zucchinis in half lengthwise and use a spoon to scoop out the seeds, creating a hollowed-out zucchini boat.
Cook the bacon in a skillet over medium heat until it is crispy, then set it aside to cool.
In a medium bowl, mix together the cooked quinoa or rice, diced tomatoes, diced onion, shredded cheese, and chopped parsley. Season with salt and pepper to taste.
Spoon the quinoa mixture into the hollowed-out zucchini boats and wrap each zucchini with a slice of bacon. Place the zucchinis on the prepared baking sheet and bake for 20-25 minutes, or until the zucchini is tender and the bacon is crispy. Serve hot and enjoy!
