Ingredients for 2 servings
- 2 salmon fillets
- Salt and pepper to taste
- 2 tablespoons of butter
- 1 tablespoon of olive oil
- 1/4 cup of sun-dried tomatoes, chopped
- 1/4 cup of chicken broth
- 2 cloves of garlic, minced
- 2 tablespoons of chopped fresh parsley
To prepare the salmon, season the fillets on both sides with salt and pepper. Heat the butter and olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes per side, or until they are cooked to your desired level of doneness.
Remove the salmon from the skillet and set it aside. Add the sun-dried tomatoes, chicken broth, and minced garlic to the skillet and stir to combine. Bring the sauce to a simmer and cook for a few minutes, or until it has reduced slightly.
Return the salmon to the skillet and spoon the sauce over it. Sprinkle with chopped parsley and serve immediately. Enjoy!
